Serves 2
Dressing:
- 30ml balsamic vinegar
- 1 tbsp olive oil
- 1/2 tbsp honey or maple syrup
- Squeeze of lemon
- Salt and pepper to taste
Salad:
- Pack of fresh kale (spinach, rocket or other greens will work)
- 160g pitted and halved cherries
- 100g goat’s cheese
- 40g pecans (pistachios and hazelnuts work well too)
Make it vegan? Skip the goat’s cheese and use maple syrup in the dressing
